Here is a great idea you can do all in one pan, you start it on your stovetop and finish in the oven. The garlic and mushroom cream sauce is heavenly. It the perfect compliment to pasta or rice.
Chicken with Garlic & Mushroom Ingredients:
- 2 large Boneless chicken breast cut in half so they are about 1/2 inch thick
- Salt and Pepper
- 1 cup chicken broth
- 3 cloves of minced garlic
- 1/2 tsp of red pepper flakes
- 1/2 tsp dried thyme
- 2 TPSP of olive oil
- 2 cups of sliced mushrooms
- 1/2 cup diced shallots or red onion
- 2 tsp of butter
- 1/2 cup half and half
- 2 TBSP chopped fresh basil
Pre-heat oven to 375 degrees. You will start on stove top and finish cooking in oven. Salt and pepper both sides of chicken, set aside.
In large skillet add 1 TBSP olive oil and cook sliced mushrooms until browned (about 3-4 minutes). Remove mushrooms from pan and set aside for later.
Use the pan you cooked the mushrooms in, add olive oil and chicken and brown on both sides this should take 2-3 minutes per side. Remove browned chicken and set aside. You will finish cooking the chicken in the oven
Again, using the same pan over medium heat add chicken broth, minced garlic, red pepper flakes, shallots and thyme. Using a whisk scrape bottom of pan so all the bits are loosened and don’t stick to the bottom of the pan, reduce heat and simmer for about 8 minutes or until about 1/2 cup sauce remains.
Remove sauce from heat, whisk in butter and add cream and mushrooms, return to heat for no more then 1 minute. Remove from heat, add chicken to sauce pan and cook in oven for 8 minutes or until chicken is completely done.
Top with fresh basil and serve as is or with pasta or rice. Enjoy!
