Throw Cilantro in practically any dish and I can usually guarantee I will love it. Lime and Cilantro is one of my favorite flavor combinations. These Lime and Cilantro Chicken Drumsticks are delicious and easy to make. Serve with rice or potatoes and you have yourself a great meal.
Cilantro Lime Chicken Drumsticks:
Recipe slightly adapted from Budget Bytes
- 3 Tbsp olive oil
- 5 garlic cloves minced
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
- 2 limes
- 1/2 cup cilantro
- 8 drumsticks
In bowl combine olive oil, garlic, cumin, salt and pepper. Add zest and lime juice from one lime. Add 1/4 cup of cilantro stir until mixed well. Marinate drumsticks in marinade for a minimum of 30 minutes.
To bake the drumsticks, preheat oven to 400 degrees. Add Chicken into casserole dish and pour marinade over the top of the chicken. Bake for 40-45 minutes or until thermometer reads 160 degrees. Make sure you baste the chicken once or twice during the cooking process.
Garnish Chicken with fresh lime slices and remaining cilantro. Enjoy!
