It’s so much fun to have friends over and enjoy some football. Whenever we watch a game I love to make Potato Skins, because they are filling, simple to make and incredibly delicious. Best of all, they are easy on the pocket book. These are very quick and easy to prep and a big crowd pleaser.
Ingredients:
- 1 bag of 5 lb potatoes (preferably on the smaller side)
- 2 tablespoon butter
- 2 tablespoons olive oil
- 2 cups shredded cheese
- 1 cup sour cream
- chives or green onions
- salt
- pepper
- Johnny seasoning salt
- bacon bits
Wash all the potatoes. Cut small potatoes in half, then scoop out some of the potato out with a spoon.
Line potatoes on a cookie sheet. Drizzle oil over potatoes and add small amount of butter to each potato. Add salt, pepper, and Johnny seasoning salt. Next bake in preheated oven at 375 for 45 minutes.
Take out of oven and add cheese. Place back in oven for 15 more minutes. Remove from oven and add sour cream, bacon bits, chives. You can add more salt if needed. Plate them up and watch them disappear. Enjoy!
