Raspberry Cream Cheese Coffee Cake
Recipe from OMG Chocolate Desserts
Cake:
- 1 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 5.5 Tbsp Unsalted butter
- 1/2 cup sugar
- 1 egg yolk
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup sour cream
Filling:
- 1 package 8oz cream cheese (room temp)
- 1/4 cup sugar
- 1 egg white
- 1 cup fresh raspberries
Streusel Topping:
- 1/2 cup sugar
- 2/3 cup flour
- 4 tbsp chilled butter cubed
Preheat oven to 350, and grease a 10″ springform pan.
In bowl combined the dry ingredients flour, baking powder, baking soda and salt. Set aside.
In electric mixer cream butter, then add sugar, egg yolk, (set aside white for later), one full egg and vanilla. Gradually add flour mixture and then sour cream. Mix well and add to springform pan.
You next job is to mix the filling by whipping cream cheese, add sugar and egg white. When smooth gently spread over cake batter. Then sprinkle fresh raspberries on top.
In bowl, add cold cubed butter, flour and sugar. With a pastry cutter mix until combined. Sprinkle over the cake batter with raspberries.
Cook for 50 minutes or until lightly golden brown on top.
Let cool remove from spring form pan slice and enjoy!
