I came across this recipe at a family reunion, and I changed is up a bit and made it my own. This is a perfect dinner for a warm summer day when the last thing you want to do is turn on your oven. This recipe is refreshing and delicious. Your family will love it.
Ingredients:
- 2 large cucumber
- 1 lime
- 1-2 roma tomato
- 1 avocado
- 1 red pepper
- 1 small red onion
- 1 clove garlic
- salt
- pepper
- 1/2 lb bay shrimp(imitation crab works will too)
- cilantro
- 1/4 shredded parmesan or feta cheese (optional)
- tortillas
- olive oil
First you will need to peel cucumbers, slice them in half the long way, remove seeds, sprinkle with salt and set aside.
Meanwhile, add a small amount of olive oil to sauce pan and add diced red onion and minced garlic, sauté for just a couple minutes until the onions are starting to soften but still have a crunch to them. Add to a large bowl.
Next add chopped peppers, avocado, tomato (I remove the excess seeds) Chop the peeled cucumbers and add to bowl. Add salt and pepper to taste.
Squeeze fresh lime juice over chopped vegetables.
Next, add cheese (optional), shrimp and chopped cilantro and toss until will combined. Aren’t the colors in this dish gorgeous!!
This dish can be made hours ahead of time and refrigerated or served right away. Serve with warmed tortillas, wrap and enjoy! You will love this dish on a warm summer day.
I am thinking you could even substitute the shrimp for a rotisserie chicken if you aren’t a fan of seafood.
This can also be a great appetizer dish if served the tortilla chips.
