Winter is hanging on so a nice warm bowl of soup hits the spot. I love a bowl of creamy potato soup and this one is divine because it also includes hearty turkey sausage too. It’s super easy to make because you throw everything in your slow cooker too.
Turkey Sausage and Potato Soup
- 4-5 medium potatoes
- 1 lb smoked turkey sausage links (like Johnsonville)
- 2 cups chicken stock
- 1 1/2 cup half and half
- 1 red pepper
- 1 cup diced onion
- 1 clove minced garlic
- 1 tsp seasoning salt
- 1 tsp garlic powder
- Salt and Pepper
- 2 cups cheddar cheese
- parsley to garnish (optional)
Peel and cube potatoes, dice red pepper and onion. Add all ingredients (except cheese) into slow cooker and cook on low for 5-6 hours.
When soup is done, potatoes should be soft and you should be able to easily pierce with a fork.
Add cheese, stir until melted and combined into soup. Garnish withe extra cheese and parsley. Serve with corn bread. Enjoy!
