Watermelon Cupcakes in a Jar

These super cute watermelon cupcakes can actually be bake in 4oz canning jars.  They would be perfect for a summer party.  Not only are they super cute, but they are super easy too.   I love how they turned out!

Watermelon Cupcakes in a Jar:

  • box white cake mix (and ingredients on the box, eggs, water, vegetable oil)
  • green food coloring
  • 24 – 4 oz canning jars (sprayed with non stick cooking spray)

Frosting:

  • 1 cup butter
  • 1 teaspoon vanilla
  • 4 cup powder sugar
  • 4 tablespoons milk
  • red or neon pink food die

Decorating:

  • 1 decorator bag
  • 1/4 cup mini chocolate chips
  • 1 pack of Sour Patch watermelon candy

Mix cake mix as directed on box,  add several drops of green food coloring.   Fill (24) 4 oz canning jars with cake batter about 1/3 full.  Bake at 350 degrees for 18 minutes or as directed on cake mix box for cupcakes.

Allow cupcake jars to completely cool.

To make frosting:  whip butter,  add vanilla and then gradually add powdered sugar and milk.  Whip until combined.  Add enough food coloring to make bright pink color.  I highly recommend the Wilton Color Right Performance Color System, they make it super easy to get almost any color you want.  Add frosting into decorator bag.  Snip off the end with scissors and squeeze in a swirling motion onto of the cake.

Add mini chocolate chips and watermelon candy.  If you want you can finish them off by tying a wooden fork on to the jars with string.  Enjoy!
