These Bacon, Egg & Cheese Breakfast Cups make a great perfect breakfast because they are quick and easy and they have everything you want with your breakfast…bread, bacon, egg and cheese. These would be great to serve if you have a large group coming over for breakfast, just double or triple the recipe and you have enough for a crowd.
Bacon, Egg & Cheese Breakfast Cup Ingredients: (makes 6)
- 6 eggs
- 2 pieces of sliced bread
- 6 strips of partially cooked bacon
- 1/4 cup shredded cheese
- Salt and pepper
- Fresh chives for garnish
Spray muffin pan with non-stick cooking spray. With a circle cutter (you can also use the top of a drinking glass) cut six circles out of the bread and place in the bottom of each muffin tin.
Then take the partially cooked bacon and wrap around each muffin tin to create a wall.
Add a bit of shredded cheese to the top of the bread then crack in egg in each one. Add salt and pepper.
Bake at 400 degrees for 15 minutes.
Garnish with fresh chives. Serve immediately. Enjoy.
