I’m always looking for snacks that are not only delicious, but healthy too! These are snacks are tasty and totally guilt-free. Give them a try, you won’t be sorry you did.
Baked Parmesan Zucchini Ingredients:
- 4 medium/small zucchini
- 2 teaspoon olive oil
- 1 1/2 teaspoon lemon juice
- 2 cloves minced garlic
- 3/4 cup parmesan cheese
- Salt and Pepper
Preheat oven to 350 degrees.
In small bowl mix oil, lemon juice and garlic. Set aside.
Cut zucchini in half and then cut in the middle. You should have 4 pieces.
Line the zucchini on baking sheet with Non-Stick Silicone Baking Mat (2-pack). Brush oil mix onto each of the zucchini. Make sure you get the garlic pieces onto each piece.
Add salt and pepper. Top with a generous amount of cheese. Bake for 12-15 minutes. Enjoy!
Tip: I always have pieces of the cheese fall onto the baking sheet. Once they bake they are crispy and delicious I often add them to the top of the zucchini.
