I’m always looking for new ways to cook salmon and finding new and different ways to top the salmon has been fun. I really like salmon with this pineapple salsa. It gives it a fresh new flavor that is really good.
Baked Salmon with Pineapple Salsa
(recipe from Joyful Healthy Eats)
- 1 lb Salmon
- 1/2 tsp lime zest
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1 /4 tsp garlic powder
- olive oil
- Salt to season
Pineapple Salsa
- 1 1/2 cup diced fresh pineapple
- 1/3 cup diced red pepper
- 1/4 cup diced red onion
- 1/4 cup fresh cilantro
- 2 TBSP Fresh lime juice
- 1 TBSP diced jalapeño
- Salt and pepper to taste
First place salmon on large piece of foil. Add a drizzle of olive oil over the top of the salmon, season salmon with spices. Next, fold foil to make pouch, place on pan and cook at 375 for 20-25. The amount of time it takes to cook will depend on how thick your salmon is. You can also grill your salmon if you prefer.
Meanwhile make salsa. Add pineapple, pepper, onion, jalapeño, and cilantro into a bowl. Toss, add lime juice and salt and pepper. Give it another toss and place in refrigerator until salmon is ready.
When salmon is cooked to perfection, slice and top with pineapple salsa. Enjoy!
