I love August in the Pacific Northwest for so many reasons, but one of the reasons at the top of my list is all of the FREE blackberries. We are so blessed to have blackberries growing wild, I try and pick them a few times a week to get a nice stock pile of berries. It is so nice to have blackberries in the freezer ready for baking. One of our family faves is Blackberry Cobbler, its super easy to make and takes less time than a pie.
Blackberry Cobbler
- 6 cups of fresh or frozen blackberries
- 1/2 cup butter
- 1/3 cup flour
- 1/3 cup brown sugar
- 2/3 cup oats
- 1 teaspoon cinnamon
- 1/4 cup sugar
- 1 tablespoon corn starch
- 1 tablespoon lemon juice
- 2 tablespoons water
In 9×9 glass dish add fresh or frozen black berries.
In small bowl add white sugar, cornstarch, water and lemon juice, mix together and drizzle over the blackberries
For topping: in bowl add flour, brown sugar, oats, and cinnamon, cut in butter and blend with pastry cutter or fork.
Sprinkle topping over berries and bake at 375 for 30 minutes. Let cool and serve with vanilla ice cream. Yum!
