I love me some fruit with a crust or a crumbly topping, pies and cobblers are my fave. That’s why I really enjoy these Blueberry Oatmeal Crumble Bars, it’s like a pie only you can hold it in your hand and take it with you on the go. These are really yummy and would be great for your next get together (or even just for your own family).
Blueberry Oatmeal Crumb Bars

Crust and crumble topping
- 1/2 cup butter (melted)
- 1 cup flour
- 3/4 cup old-fashioned whole-rolled oats
- 1/2 sugar
- 1/4 cup brown sugar (packed)
Blueberry layer
- 2 cups fresh blueberries
- 1/3 cup sugar
- 2 TBSP lemon juice
- 2 tsp cornstarch
Preheat oven to 350, line 8×8 pan with foil and spray with non-stick cooking spray.
For starters, make the crust and crumble topping. In bowl you’ll start with the melted butter then add flour, oats, sugar and mix together with your hands. When it’s combined it should be a crumble mixture with some large pieces still in the mix.
Set aside a generous 1 generous cup of the crumble mixture. Pat down remaining mixture on the bottom of the prepared 8×8 pan.
For blueberry layer simply add blueberries, sugar, lemon juice and cornstarch and toss together. Add blueberries to pan on top of crust. Add the crumble mixture on top and gently pat down. Bake for 45-50 minutes or until golden brown. Let cool and cut into pieces. Enjoy!
