Do you have an abundance of apple or have you come across a super deal on apples? You can make some Apple Pie filling that will be great to have on hand. This process is fairly simple and straight forward, so even if you haven’t canned much you can tackle this project.
Ingredients for Canned Apple Pie Filling:
Makes 4 Quarts
- 12 cups apples (any type), peeled, cored and sliced (about 12-16 apples)
- 2 cup sugar
- 3/4 cup Clear Jel
- 1 1/2 teaspoon cinnamon
- 1 3/4 cup water
- 2 cup apple juice
- 6 tablespoons bottled lemon juice
First peel slice and core apples, you can either do this by hand or with an Apple Peeler/Corer/Slicer. My apples were to large for my peeler so I did it by hand. As you are preping the apple place them in a bowl of water that has some lemon juice in it to prevent browning.
Combine all other ingredients in a large pot. Place over medium-high heat, and stir until mixture begins to bubble and turn translucent. Cook one more minute, stirring constantly.
Remove from heat and fold in apple slices.
Fill jars with mixture, leaving 1″ headspace. Make sure you push the apples filling down to the jar to prevent air pockets. Add caps, and process in boiling water bath for 25 minutes.
Each quart jar will make one pie. These make a great gift for friends or even to have them on hand for yourself. It is so nice having pie filling pre-made, because it makes baking a pie a cinch!
I do not recommend trying to use something other then Clear Jel. Clear Jel is not available at most stores, so you will need to plan ahead. Using the Clear Jel makes for a beautiful presentation, other type of thickeners do not can as well.
