I love the combination of chocolate and raspberries! These Chocolate Raspberry Cheesecake Mousse cups are divine and the best part is they are super easy to make. Your friends and family will rave about this yummy dessert. I love that I can make these ahead of time and store them in the refrigerator until they are ready to serve.
Chocolate Raspberry Cheesecake Mousse Cups
Crust:
- 1/2 cup Oreo crumbs
- 2 Tbsp melted butter
Mousse:
- 1 cup heavy whipping cream
- 8oz cream cheese
- 3 oz semi sweet chocolate bar
- 1/2 tsp vanilla
- 1 cup powdered sugar
- 1 cup raspberries (strained with seeds removed)
Garnish:
Sweetened whipping cream, raspberry and mint for garnish.
Add cookie crumbs and melted butter into small bowl and mix until well combined. Add a heaping spoonful to each cup.
In a double-boiler melt chocolate and set aside.
In electric mixer with whisk attachment whip heavy cream on high until stiff peaks form. Add cream cheese and mix at medium speed. Add melted chocolate and vanilla, continue to mix. Add powdered sugar and lastly add the raspberry puree.
Spoon mousse into individual cups and top with whip cream and a raspberry. This recipe will make 6-4 oz cups. Enjoy!
