This festive Cranberry cake is perfect for the holidays!
Ingredients
- 2 eggs
- 1 1/3 cups sugar
- 1/2 butter
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 1/3 cup flour
- 1 1/2 cup fresh cranberries
- powdered sugar for garnish
Instructions
- Preheat oven to 350 and prep a 9×9 pan with non-stick cooking spray.
- Beat eggs and sugar together until peaks form. Add butter, and extracts and mix together. Mix until well combined, it will probably take about two minutes.
- Gradually add flour until just combined.
- Gently fold fresh cranberries into batter.
- Bake at 350 for 35-40 minutes. Allow to cool completely and garnish with powdered sugar.
