This is not your average soup, the combination of the rich and creamy brie and delicious mushroom creates a sophisticated and rich flavor.
Creamy Mushroom & Brie Soup Ingredients:
- 1 tablespoon olive oil
- 2 lb mushrooms sliced
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, chopped
- 1 1/2 teaspoon thyme
- 3 tablespoons flour
- 2/3 cup white wine (or broth)
- 3 (14oz) cans Chicken broth
- 8 ounces brie, cut into 1 inch pieces
- 1 cup whole milk
- Salt and pepper to taste
Toss the mushrooms in olive oil. Place mushrooms on a baking sheet and bake at 400 degrees for 25 minutes.
Meanwhile, melt butter in saucepan add onions and cook until tender. Add garlic and thyme and cook for about a minutes. Add flour and cook for 2 more minutes.
Next add wine, then broth and mushrooms and bring to boil, reduce heat and simmer for 10 minutes.
Add milk and brie, cook until the brie has melt, add salt and pepper. The final step is to puree to desired consistency. Enjoy!
