I saw this recipe for Frosted Sugar Cookie Bars over at Shugary Sweets and I knew I had to make them. I haven’t met anybody that doesn’t love a mouth-watering sugar cookie with frosting. I love that these are easier to make than actual sugar cookies, you bake them in a pan and then cut them into squares. Yummy!
Frosted Sugar Cookie Bars – Recipe courtesy of Shugary Sweets
For the Cookies:
- 1 cup butter, softened
- 1 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp kosher salt
For the Frosting:
- 1 cup butter, softened
- 1 tsp vanilla extract
- pinch of kosher salt
- 3 cup powdered sugar
- 3 Tbsp milk
- 1 drop red food coloring (optional)
- sprinkles, (optional)
In mixing bowl add butter and sugar and beat on medium high while scraping sides the sides of the bowl. Continue to mix while adding vanilla and eggs. Next add in the dry ingredients, flour, baking powder and salt. Continue to mix and scrape the sides of bowl and beat for another 20 seconds to make sure everything is combined well.
Line a 15 x 10 x 1 baking sheet with foil. On top of foil line pan with Parchment Paper. Using floured hands to press dough into pan. I recommend using a pastry roller to make nice and smooth. Bake at 350 degrees for 18 minutes, until the edges begin to brown. Remove from oven and let them cool completely.
To make the frosting, mix butter and vanilla on high for about two minutes until mixture becomes nice and fluffy, add salt, powdered sugar and milk. Continue to beat for 3 minutes. Scrape the sides of the bowl and beat for one more minute. If desired, add food coloring.
Spread frosting over cooled cookies and add sprinkles. Cut and Enjoy!
