I don’t know what it is about combing cake batter and ice cream, but it is a combination that I just LOVE! I enjoy making homemade ice cream,it turns out so creamy and delicious. It’s way better than store bought ice cream. Here is a recipe I came up with for Cake Batter Ice Cream.
Homemade Cake Batter Ice Cream
- 2 cup whole milk ice cream
- 2 cups cream
- 2 egg yolks
- 1 cup sugar
- 2/3 cup confetti cake mix
- sprinkles (optional)
Combined sugar, egg yolks, cream, milk, and cake mix in bowl and whisk together. Add to your ice cream maker. Turn on ice cream mixer and let mix for 20 minutes. I use the KitchenAid Ice Cream Maker Attachment for my KitchenAid mixer, and I love it.
When the ice cream is ready add the sprinkles (if desired) and mix until everything is well combined.
I like to store the ice cream in 4 oz canning jars, and top off with sprinkles. They make the perfect serving size. Ice cream is good for 2 weeks. Enjoy!
