Make your own Homemade Marshmallows

Homemade Marshmallows

This recipe for Homemade Marshmallows is divine! They are great to eat on their own, or to add you your hot cocoa. Package several up and thy make a great gift too!

  • 2 teaspoons butter
  • 3 envelope unflavored gelatin
  • 1 cup cold water divided
  • 3 cups sugar
  • 1 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon clear vanilla

Line a 13 x 9 pan with foil and grease the foil with butter and set aside to use later

In a large metal bowl, sprinkle gelatin over 1/2 cup water and then set aside for later

Use a large heavy saucepan to combine the sugar, corn syrup, salt and remaining water. You will want to bring to a boil, stirring occasionally.   Cook until a candy thermometer reads 240° (soft-ball stage)  It is not necessary to stir during this stage..

Once it reaches 240° remove from heat and gradually add to gelatin mixture.   Once the are combined mix on high speed until mixture is thick and the mixture  doubles in size, it will probably take about 15 minutes.   Next, add in the vanilla.

Spread the mixture into the prepared pan.  Cover and let stand at room temperature for 6 hours or overnight.

To remove marshmallows from pan, lift using the foil.   Coat a knife or pizza cutter with cooking spray or butter and cut marshmallows into 1-in. squares.

Cover marshmallows with sprinkles if desired.   Keep butter handy it is a must when working with this recipe.   I lightly coated my hands with butter and made all the difference in the world

Once complete, store in an airtight container in a cool dry place.   Makes 9-1/2 dozen.
