I love a fresh salad, especially during the summer months. To make our salads a little more hearty I like to add beans or meat. Beans are great to keep on hand because they are so convenient to use for last-minute meal ideas. Because they are inexpensive beans are also a great option to stretch your dollar. Bush’s Best Beans come in a ton of varieties so there is a bean for whatever meal you dream up.
I used the Bush’s Best Garbanzo Beans in this Italian Chop Salad. They helped to make the salad more filling and it also added fiber and protein to our meal.
Italian Chop Salad with Garbanzos:
- 1 head of lettuce
- 1 red bell pepper
- 1/2 small red onion
- 1 roma tomato
- 3-4 oz salami (sliced or cubed)
- 1 can Bush’s Best Garbanzo Beans
- 1/2 cup shredded parmesan cheese
Dijon Vinaigrette:
- 1/2 cup olive oil
- 3 TBSP red wine vinegar
- 2 tsp dijon mustard
- 2 TBSP fresh lemon juice
- salt and pepper to taste
In small bowl whisk together vinaigrette ingredients and set aside.
Chop up lettuce, add to large bowl. Dice red peppers and roma tomatoes and add to lettuce. Slice onions and salami and add to bowl and toss.
Next, open the Bush’s Best Garbanzo Beans and strain the liquid, rinse thoroughly with water and add to salad.
Add vinaigrette and toss into salad until mixed well. Sprinkle with the cheese and and give the salad one more quick toss. Enjoy!
You can find a nice variety of Bush’s Best Beans at Walmart. Beans are so versatile! They can be added to so many different recipes. We love using black beans and pinto beans in our Mexican dishes. In fact, both the black and pinto beans are a staple at our house, we keep them stocked in our pantry.
