I love Spring! It means flowers, warmer weather and Easter. I enjoy baking treats for all of the holidays and Easter is one of my faves. The fun spring colors and cute bunnies and chicks make baking that much more fun. Here are some fun and easy Marshmallow Bunny Pops you can make for some Easter treats at your house. Kids will love them!
Ingredients:
- 1/3 corn syrup
- 1/2 cup water
- 1 envelope gelatin
- 1 cup sugar
- 1 tablespoon Butter
- 1/2 teaspoon vanilla
- sugar sprinkles
- sticks (I used straws found in the Target dollar spot)
- Wilton Mini Cakes Bunny Rabbit Pan Mold ~ 6 Bunnies per Pan
- frosting -if desired to decorate
Recipe makes 4 bunnies
In small bowl add 1/4 cup water and sprinkle gelatin over top and set aside.
In sauce pan add corn syrup, sugar, and remaining water bring to boil, using a candy thermometer cook until it reaches soft ball stage (240 degrees).
Remove from heat and pour into a mixing bowl, add water gelatin mixture and blend on high until it doubles in size (about 14 minutes). After is has doubled in size add the vanilla.
Add marshmallow to generously greased Wilton Mini Cakes Bunny Rabbit Pan Mold, I used butter to grease mine. When they are filled, use buttered wax paper to push and flatten marshmallow into pan. Set aside to set for a few hours.
Use a knife to gently remove bunnies from pan, place in a bowl of sprinkles and shake until all marshmallow is coated with colored sprinkles.
Then gently insert stick into the marshmallows. You can either leave them undecorated or add nose and eyes with frosting.
To keep fresh use candy bags to wrap each bunny and finish off with a ribbon. These make great additions to your families Easter baskets. Enjoy!
