Now that the kids are back in school we are in need of quick and easy dinner ideas for those busy school nights when the kids have sports practice, play practice or even homework. I stopped by my local Safeway (Albertsons) store and picked up a Rotisserie chicken and some Old El Paso products and came up with this super quick recipe for Easy Chicken Taco Bowls. Prep time less then 15 minutes!

Easy Chicken Taco Boats (makes 8 taco boats)
- 1 package of Old El Paso Taco Boats
- 1 can Old El Paso Refried Beans
- 1 can Old El Paso Enchilada Sauce
- 1 Rotisserie Chicken
- 1 cup shredded Mexican cheese
- 1 cup chopped tomatoes
- 1/2 cup chopped cilantro
- Other toppings you desire (olives, onions, peppers, sour cream, guacamole)
Remove meat from rotisserie chicken and place in mixer, mix on medium speed for 30 seconds. The mixer shreds the chicken effortlessly.
Add warmed Old El Paso Enchilada Sauce to shredded chicken and stir with spoon until the sauce has coated all the chicken nicely.
Inside each individual Old El Paso Taco Boat add layer of the warmed refried beans and then add the chicken. Add your favorite toppings (cheese, olives, cilantro, etc.) and place in oven and broil for a couple minutes until cheese is melted.
Top with sour cream and tomatoes. Enjoy! You can customize each Taco Boat to ensure everyone is happy…even the picky eaters!
