Peanut Butter Chocolate Chip Pie
Recipe adapted from Bake or Break
Crust:
- 1 1/2 cup graham cracker crumbs
- 1/2 cup sugar
- 1/2 tsp ground cinnamon
- 1/2 butter melted
Filling
- 8 oz cream cheese (room temperature)
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla
- 1 1/2 cup heavy cream
- 3/4 mini chocolate chips
Preheat oven to 350. Spray 9 inch springform pan with non-stick cooking spray
Add butter to microwave safe dish and microwave until melted. Add graham crackers, sugar and cinnamon mix well. Add mixture to bottom of springform pan and bake for 10 minutes at 350. Let cool completely.
Meanwhile with an electric mixer, mix cream cheese, peanut butter, sugar and vanilla until completely combined.
In separate bowl beat whipping cream until soft peaks form. Then gently fold whipping cream into cream cheese mixture.
Gently mix in chocolate chips (reserve a few to sprinkle over the top).
Pour filling into springform pan and sprinkle with remaining chocolate chips. Refrigerate for at least 4 hours. When ready to serve add whipping cream and enjoy!
