I have a new addiction…it’s the Raspberry Swirl Pound Cake from Starbucks. It is so good! I found a recipe that is very similar to the Starbuck’s version and it is oh-so-easy to make!
Raspberry Swirl Pound Cake

- 1 box pound cake mix
- 1/2 cup butter-softened
- 2 eggs
- 2/3 cup milk
- 1 tsp lemon juice
- 1/3 cup seedless raspberrry spread
- 6 drops red food coloring
Frosting
- 8 oz cream cheese
- 1 cup powderered sugar
- 1 tsp lemon juice
Preheat oven to 350, and grease 9×5 pan
In a bowl mix cake mix, butter, milk, and eggs until well combined. Beat for an additional 2 minutes.
Remove 1/3 of the batter and stir in raspberry spread and food coloring. (food coloring is optional, but if you want a bright contrast then I recommend it, other wise the red swirls are much lighter)
Add lemon juice into white batter and stir. Add batter to the pan starting with the white batter and then alternate layers of white and red.
Bake for 55 minutes or until done.
To make the frosting beat cream cheese, add powdered sugar and lemon juice until smooth. Spread on top of cooled loaf of pound cake. Slice and enjoy!
