I love that the Skinnygirl Tasty Nutrition Bars are a great healthful snack that is not only delicious but super convenient too. I make sure to keep several in my purse for whenever hunger strikes.
I also love the convenience of the Skinnygirl Snack Swap because it gives me several better options for whatever I am craving. I used the Skinnygirl Snack Swap website and chose to make the Low Calorie Mango Sorbet with Raspberries. I recently returned from a trip to Hawaii and I have been craving all things tropical.
I was surprised how easy this was to make. It took just a few basic ingredients and I had a sweet, tropical frozen treat that packs 5g of dietary fiber, which is important for digestive health and cholesterol management. Not only that, but mangoes are an excellent source of vitamin B6 and a good source of vitamins A + C. (I learned all that healthy information from the Skinnygirl Snack Swap site).
Low Calorie Mango Sorbet with Raspberries
- 2 fresh mangos
- 1⁄2 cup sugar
- 1⁄2 cup water
- Juice of 1 lime
- 1 cup fresh raspberries
1. Heat sugar and water in a small saucepan on the stove on low heat until sugar is fully dissolved, making a simple syrup. Allow to cool.
2. Cut mango and place in highspeed blender or food processor. Blend with the juice of one lime until you have a smooth puree.
3. Add cooled simple syrup to mango puree and blend to combine
4. If you have an ice cream maker, you can pour the mixture in and freeze/churn according to manufacturers’ instructions. If you do not have an ice cream maker, pour the mixed puree into a baking dish or shallow container. Cover. Place in freezer and stir mixture every 30 minutes for 3-4 hours.
5. Divide into bowls and top with fresh raspberries.
