I know many of us choose to eat healthier when the new year rolls around. Snacking is one of the ways that we can sabotage our healthy eating, but thanks to Sunsweet® prunes we can make sure we snack healthy in the new year.
You can drink PlumSmart® Light or eat the Amaz!n™ Prunes straight out of the bag as a healthy snack. It’s also easy to add the Feel Good Fruit to your favorite snacking recipes. I added the diced prunes to my homemade granola recipe and it added some great flavor and health benefits too, because you will find heart healthy fiber and potassium in prunes.
Granola is pretty much a staple at our house, we love to add it to our yogurt, ice cream, berries or even just eat is plain. Making your own granola is a simple thing to do and you can mix in all of your favorite ingredients. I made some homemade granola that includes the Sunsweet Amaz!n™ Diced Prunes and I think it turned out amazing! You can make some too.
Homemade Granola:
- 3 cups rolled oats (not instant)
- 3 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup Honey
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla
- 1/2 cup Amaz!n™ Diced Prunes
- 1/2 cup sliced almonds
Combine oats, brown sugar and cinnamon in large bowl. In small bowl combine honey, oil, and vanilla. Next add the honey mix and into the dry ingredients, with spatula mix until all oats have been well coated with the honey mixture.
On a large cookie sheet spread out the oats and bake at 300 degrees for 15 minutes. Remove from oven, toss and cook for additional 10-15 minutes until golden brown. Let cool.
Once granola is cool, add in the Sunsweet diced prunes and almonds. Store in an air tight container.
Yogurt Parfait with Homemade Granola and Sunsweet Amaz!n™ Diced Prunes
Like I mentioned before, our family loves to add homemade granola to our yogurt. You can make these yummy parfaits as a great alternative to an ice cream sundae. It’s a great way to have a treat but still eat healthy.
To make parfaits, use parfait type glasses, add a small amount of yogurt in the bottom of the glass (I recommend vanilla, greek, or plain). Add a generous amount of Sunsweet Amaz!n™ Diced Prunes. Fill with another layer of yogurt, and top off with the homemade granola. YUM!
