This cake is awesome!! I have made this cake for several occasions and everyone just loves it, it get’s rave reviews by everyone. It is fairly easy to make and it looks super fancy. Your family and friends will be impressed with the look and the amazing taste of this cake.
Raspberry Almond Cake
Recipe by Williams-Sonoma
Ingredients:
- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup butter
- 1 1/2 cup sugar
- 2 tsp vanilla
- 1 tsp almond extract
- 1 cup milk
- 5 egg whites
- 3/4 cup raspberry jelly (warmed)
- 1 cup almonds
- raspberries for garnish
Cream cheese frosting:
- 8 oz of cream cheese
- 6 tbsp butter
- 2 cup powder sugar
- 1 tsp vanilla
- 1 tsp almond extract
- 2 tbsp milk
Preheat oven at 350, and grease (2) 9-Inch Nonstick Cake Pan with straight sides. (Amazon link) In bowl add flour, baking powder and salt and set aside for later.
In mixing bowl beat butter until light and fluffy, add sugar until well combined. Add Vanilla and almond extract. Slowly add flour and milk until combined.
With new mixing bowl beat egg whites high setting until stiff peaks form. Then fold into batter mixture.
Divide batter beween 2 -9 inch bake pans and bake for 30 minutes.
Meanwhile make Frosting: Mix butter and add extracts, add cream cheese. Gradually add powdered sugar and milk until light and fluffy.
Once cakes are baked let them cool completely. Then cut each cake in half. You will now have 4 layers.
Start with your first layer and add a layer of frosting and then spread warm jelly. Repeat two more times. Finally and top layer to cake and frost sides and top of cake.
Next you will garnish the cake. Add sliced almond to the side of the cake and add raspberries around the perimeter of the cake. Slice and enjoy!
P.S. This is Christy, chiming in with my input on this amazing cake!! This is by far my favorite dessert that my sister makes. Any time she has to bring a dessert to a get-together I beg her to bring this cake. Give it a try, you will love it! I have even made it myself once and it turned out gorgeous. I’m not nearly as good at baking cakes as my sister so I was totally impressed with the results.
